Celebrate Cinco De Mayo With The Perfect Mexican Fiesta

If your an avid reader of my blog or regularly read my twitter or instagram’s then you will know that I have a serious obsession with Mexican food! So much so a fair few of my foodie posts here are all Mexican related. Now with Cinco de Mayo only a few days away Mexican celebrations are in serious swing all over Dublin. We had plans to start of the bank holiday weekend with a lovely night out in one of our favourite Mexicans but unfortunately the boy being a silly billy broke his toe yesterday so a night in was the only option!! 

I’ve mentioned these recipes here, here and here before but these have changed and to be honest is probably the best out of all of them!!! (FYI my recipe for my homemade chips is still number one but I was just far to lazy to do it last night so Doritos had to do!!! haha) 

Yummy Guacamole 

I grew up as a kid learning how to make Guacamole from dad for every BBQ or summery dinners we made, we never made Mexican this was just always an essential. He has his own variations of guacamole but I have finally turned teacher and have managed to make him admit that mine is better!!:) Sorry Dad!!!! Guacamole is the easiest thing to make and perfect with roast chicken, steak or even on wraps and sandwiches. It doesn’t have to be with a Mexican dish and that’s what I love about it. 

Ingredients 

(serves 3 very hungry people!) 

3 Avocados (make sure they are ripe and a little squishy to touch!)

Handful of Cherry Tomatoes 

Handful of Coriander 

Juice of 1 lime 

2 cloves of Garlic

1 red Chili 

Glug of Olive oil

Salt to taste

Throw all the ingredients into a food processor and blend blend blend depending on how chunky / creamy you like it!! Then scoop up with a tortilla chip and enjoy! 

Chunky Spicy Salsa 

Quite like the Guacamole, this was one of Dads dishes I grew up with but instead of all of my added extras he was strictly red onion, tomato and chili! While lovely I found it quite plane so I’ve elevated it to something amazing. I don’t like my salsas quite gooey so I chop all of these instead of throwing it into a food processor but the boy demanded post taking these photos to throw it in for a quick blitz to mix it all up and chop it just a little bit more, you can also blend this to a watery consistency if you like that style of salsa! 

Ingredients

(serves 3 very hungry people!) 

Handful of tomatoes

3 cloves of garlic 

handful of coriander 

green chilli 

Juice of half a lime

1 red onion 

drizzle of olive oil

salt to taste 

Chop it all up and put it in a bowl – its as easy as that!! if you prefer it a little less crunchy chop it up and pop in a food processor for a couple of blasts and your good to go!

Serve with sour cream and tortillas and of course a stiff drink to celebrate your hard work!

    I whipped up something similar for Cinco de Mayo to go with the boxing last weekend. Your salsa looks super tasty though so I think I'll be giving that a try! xx
